Open Question: Is it legal for the doctor's office to ask for a blank check or to hold your debit card prior to services?

I went to urgent care to prevent an asthma attack. My insurance has changed and I now have a health reimbursement plan. After I had signed in, the receptionist asked for a check with my signature or to hold my debit card. I said, "heck no"! It turns out that she couldn't make me but she seemed very annoyed that I didn't want to follow her directions. Why didn't they just ask for a prepayment for the doctor's visit, followed up by payment of services rendered? The receptionist could have taken a "lunch break" and cashed a random amount on my check at the bank!
